I have been really busy these past few days and although it felt really good to be doing something a little productive, sometimes adrenaline and emotions just fills you up and to be honest some other days when you least expected it, the low swing catches you just like that and suddenly there is that surge of so many emotions you don't even know exist. You feel happy, you feel tired, you feel sad, anxious, overwhelmed all at the same time .... the whole menopause package . And although I have given quite a bit of my time scanning textbooks about it, I realized you can never be prepared when it comes. So now I just like to think of it like a secret affair... you don't really want it but it sure is hard to break free away from it. LOL!

So it seems like this menopause thing at 35 is my greatest forbidden love affair and its all right there out in the open. Okay, when my doctor told me that I may have to deal with menopause, I didn't think it was something serious. I mean all women goes through it... at least we all have to once in our lifetime. But at 35? such is a different story honey... the food cravings can be tolerated but the "moodcoaster" is something you can never dream of. Well, I'd definitely knew when it comes but sometimes I just can't control it anymore... and it turns me into a Gollum... yup menopause is THAT RING my precious... and suddenly you are not that cute anymore...you will somehow began to love and hate yourself. But there is no running away from menopause. And the sad thing is, the only drug that would somehow help me get through it is the one which caused my cancer... so I guess I am left alone... so here's how I manage it (besides having a very patient and understanding husband)

#1 I let myself just feel the emotions. I make sure that I talk about it with my husband and make him understand that although it may seem like he has something or other people has something to do with it, it is not. It is just the chemical imbalance playing in my head. So I created a "warning call" and whenever I call it out, husband gives me space to "clear my head" and let me just have mE time for myself.

#2 I look for behavior patterns - Knowing yourself is the key to minimize "emotional damage" while going through menopause. I noticed that whenever I am tired and overworked, it is when my mood starts to hit bottom. So before that happens, if I can prevent it, I stop myself from whatever I am thinking or doing and divert myself to things which calms me. Like crochet, reading a book, blogging, playing with my dog, or go out on an evening walk with my Ryan. And silence calms me a lot. So, I just learn to let go for a while of whatever is making me stress and give myself a break. If there is one thing I learn from everything I went through life... that is to stop resisting and just feel whatever you feel at the moment and eventually move on. Think of something or do something that reminds you of being happy...

#3 Don't assume everyone understands what you are going through. Sometimes when I feel frustrated I used to project my feelings to other people... in that case my husband. LOL! but then I realized it is not fair. I have to understand that my family, friends and colleagues have issues and it is something that they too have to deal with. That is why when my mood started shifting and is turning me into a Gollum, I would keep myself from saying words that would instead hurt them. I develop a self talk technique and again remind myself that it is not about them.

#4 Talk about it - It is also very helpful to talk to someone about it. Tell a trusted friend about what you are going through or talk to a counselor or a psychologist who are trained to help you go through the issues you are dealing with. There is nothing wrong with seeking help specially for someone like me who has to go through menopause at such a very young age ;) some women go through it with no problems at all... I have to deal with some hiccups and it's okay ;)

#5 Write about it. Yes, I am a blogger but there are things I choose to keep private. And literally writing about how you feel and what happens in your life is kind of a therapy. Express yourself, ink it out. Since I started to learn how to write, I have always keep a journal beside me to write down my thoughts and reflect on my life before I go to bed. And somehow facebook, twitter, and blogging didn't change that. Hence my addiction to notebooks and pens. I learned that some thoughts are meant to be written privately rather than shouting it out on my time line. The point is... write where you know you can be yourself where you know you can never be judged.

So, there are times that you feel a little down, anxious, "not being yourself",  or sad... and it is okay to feel that way. Life is a salad of emotions, savor it because it is what makes us who we are. But if those emotions are too overwhelming... don't be afraid to tell someone about it. Talk to a family you can trust, your bestfriend or make an appointment with your favorite counselor or a psychologist. Because one thing for sure, it feel good to know that someone out there understands. And it feels great to be heard.

How's your weekend guys? hope everything is well. I know I have been in a hiatus for a while and as much as I have promised to keep updates, life is just so much that I can only do one thing at a time ;) but one thing for sure... I might be away from my blog for awhile, it won't be that long ;) 

Anyways, I am very excited and finally feels like I am on my feet finally. Well, as you may have known, I have already been back teaching for a while now, not full time, but still.... and I have recently...went back to night school to finish grad-school... takin' up where I left off ;) almost there...and no more baby steps this time... oohooh yeah! I am still the woman I used to be and it feels oooh so good to know that. I know I have to admit... it felt so good to be in that comfort zone for a while but I have to realized that... this is life, we just have to get back on the saddle and rodeo like this is our last ride.


Well anyways, since I got zero and hit a writers block these past few days, I just decided to share my very own homemade spicy vinegar dip. It is a Filipino spicy vinegar use as dip for anything like grilled fish, salads, spring rolls etc. I specially love the smell of the blended spices and yup it totally smells like being home. 

So here's what I do to make my own version of it. I chopped some garlic, onions, chili pepper and ginger.


Put it in a container and pour in the apple cider. In the Philippines we best use the coconut vinegar but since I don't have it hear  here, I just use the regular apple cider or the organic one. Whatever is available.


And there you got some ready to use dip for a more appetizing Filipino or not... meal. Have a wonderful weekend everyone and I promised to be back with more post that actually makes sense ;)

Hey guys! hope you are having a wonderful Friday. So I am slowly getting back on my home workouts and have been experimenting with easy and as much as possible healthy recipes for someone like me who can't cook ;) and since I am taking more time on my workouts, I needed something to fill my body with the right combination of food. And as some of you may known, I have been trying to stay on a vegan/vegetarian diet for a while. However I have noticed that when I work out really hard my body tend to get a little weak and I get dizzy a lot. So a long time ago I decided to incorporate eggs on my diet. 

And just lately, I wasn't able to play and workout due to muscle fatigue and pain so just lately again, I decided to incorporate fish on my diet. And I am back like a mean machine baby! LOL! Yes, I have finally decided to include fish on my diet although I do have restrictions on what kind of fish I eat and still I have to say NO to chicken and any kind of meat and I've been clean of it for a year now. Yey!

So here, I made a post work out meal of tuna and vegetables. Here, I sauteed in olive oil some mix vegetables and added some tuna. And set aside...


Then I defrost an all purpose dough which I got from Tesco and put it in a pan. No oil needed and wait till it becomes brown and appropriately cooked.


Put the mix vegetable into it and fold...there you have an after workout meal...easy to make and healthy too.

hey guys! I have been hibernating the past few days. Well, I have somehow decided to take multiple breaks from social media and the internet world since I needed a lot of time to rest and relax and calm myself. I know blogging somehow relaxes me but  I needed to have some time to just sit and do nothing but read ;) and yes I got my hands full with some other things too. So my life is pretty much up on the waist and I am wading happy through all the simple stuffs I do. And yes, been a little sick too due to muscle pain and what-nots. Seems like my recovering body can't keep up with my hyper self  :) that is why I needed to halt and rest my nerves ;)

Anyways, hibernating season won't be complete without a few reads from some of my favorite writers and of course some book adventures. So, my Ryan and I had a little trip to the bookshop and got a few books to read for this month. And yes, we did get it from a book sale. We ran into a clearance sale and got the books for 9 baht per book... I know right? I almost faint for joy! but although it wasn't that much expensive we still had to pick the best ones or just ended up with someone else's trash. Something to keep in mind when "picking". So here are my favorite pick for this month. 




These are my to do reads for this month. And please allow me a little time to scan through the pages and I will do a little review and my personal thoughts and reflection on it.

It is the weekend again and while most of us are on the go catching up with friends and "lost time" frolicking about doing all fun except work, my idea of a fun weekend is often snuggling and catching up with my readings. And although I read books like I would do a buffet, I have my own personal picks when in comes to authors and storyline. So here are my picks for a weekend book share ;)


James Patterson & Maxine Paetro's 11th Hour - I feel in love with James Patterson when I was back in the Philippines fighting cancer. His twist  unexpected endings ignites my love of surprises. The story evolves around two unrelated murder and a detective who has to struggle between solving both cases, pregnancy and a seemingly perfect relationship gone wrong. This is kind of my read version of Law and Order Special Victims Unit where Sergeant Olivia Benson (Mariska Hargitay) run after the devil itself. And one thing I really love about this book is the way it is written in a very comprehensive way. Terms are broken down into which readers can easily relate. 

Synopsis - Detective Olivia Boxer is pregnant and is also torn between solving two murder cases, a serial gang killer and a discovered backyard full of buried heads... and is her husband cheating on her? ... and so when the evidence of the cop/gang killer leads to her best friend, Boxer must find the truth about him and do her best to eliminate him as a suspect or is he? and not only she is dealing with pregnancy and personal issues, she is also being attack by a journalist who fancy tainting the investigation as well as her personal involvement with the cases. 


Jeanette Winterson's The Daylight Gate - The story is set on the era where science, sorcery and witch craft gets complicatedly tangled. So if you are into witchery, mystery and ghoulish plot, then reading this book would surely give you a back in time adventure. *please see back cover for the synopsis.


Dan Brown's Inferno - a mystery thriller novel which depicted Dante Alighiere's journey to hell. The book also features world famous museums, artifacts and a lot of breathtaking chase into mysterious alleys.  I specially adore Dan Brown's twisted plot between fact and fiction. Not only his book plays a bizarre actualization of reality, conspiracy, history and imagination but also it brings you into an allegorical presentation of the arts and history.

Good morning beautiful people! I am finally back from a "long holiday." Actually I just decided to stay under the radar for a couple of days to spend my time on some other things like being with family and of course a great deal of reading ( book review will be up soon) I hope ;) Anyways I wish all is well and having the greatest time! So this week I decided to share my healthy, easy and must try vegetarian recipes.

Vegetarian Fried Rice

What you need:
Carrots
Mushrooms
Eggs
Spices ( I use my homemade all spice)
Sesame Seeds
Cashew nuts
Boiled Rice (left over or whatever you prefer)

In the pan, pour in some olive oil. Saute the spices such as the garlic and onions. Add the nuts, diced carrots and mushrooms. Stir until the carrots and mushrooms are cooked. Then add a little bit of rice. Mix and stir. Then slightly make a gap in the middle of the pan and add the beaten eggs. Wait till eggs are cooked and stir altogether. When everything is well mixed, sprinkled with black sesame seeds and some spices then plate. 


Vegan Banana Jackfruit Pancake

And here's a sweet treat for your extra special breakfast :) just make some batter as you would do for your pancake. Just substitute your dairy mike with almond or cashew milk. Add 1/4 a kilo of jackfruit a banana or more. Enjoy!

Good morning! Its been 10 months already that I have completely stayed away from meat (yey) but I can't really say that it's an easy ride. Sometimes there are those days that you just want to grab a bucket of KFC and devour those chicken thighs like you are the last caveman. And yes, it takes a lot of determination and self talk to remind yourself that the feeling that comes after giving in is going to be ugly. So, I stick to my go-to craving fix that ditch the meat but still get the feel that it is the KFC that you eat ;)


Here's my favorite Battered Mushroom and Fried Tofu in Cashew and Almond Bits. The ingredients are exactly the same as you do for your battered chicken. However, I do added some nuts to add some crunch to it. 

What you need: 

Fresh Girolle Mushroom (sprinkled with a little bit of sea salt and spices) or
Soy Bean Tofu (marinated in vegan barbecue sauce)

For the batter (the same as what you would make for your battered chicken) just add
Spices (oregano, sesame, parsley, thyme, or anything you prefer)
Nuts (cashew nuts and almonds)

Dip the mushroom or the Soy bean Tofu into the batter and fry.

*for frying I use Canola Oil since it has high heat tolerance. Just make sure you read the label and pick one that contains omega 3 and healthy fats. And I prefer to use the oil only once. High heat often changes the oil chemical content thus increasing the concentration of trans-fat. Also, olive oil is not good for frying at high heat unless indicated.

So, there goes my go-to comfort food whenever I feel the "urge" to gobble some chicken thighs. And yes, it does taste like chicken...even better ;)


And remember to get high on fruits and vegetable and add H2o to that too. Have a wonderful day beautiful people! hugs and kisses

"Stay calm, you have a full life to live." Apparently I have to keep reminding myself so often that I never need to be afraid about anything anymore, never need to rush and never need to keep pursuing things that are never meant to be... and that I could never bungee jump even if I only live once and the "you got to live life to the fullest" requirement ;) It appears that here is that near death experience notion that we need take life at full swing, do something you haven't done before, go to places you never been before and sky dive from a speeding jet. However, my life is actually quite the contrary... I have never even done a marathon or stand up for any cause at all (not just yet). 


It seems like more and more I find myself taking life at a slow pace.  A slow walk instead of a marathon. It seems like waiting patiently for things to happen on its own time gives me that peace I never once have. And those little gaps between waiting comes like a perfect interlude.

So this week I did something that I always fail at doing. I started my own organic garden. Well, this is not a start to be honest. This is by far one start of my million tries to grow something. But I would patiently wait for the first sight of life forcing its way out of the seeds I have planted. And though I can't be too excited, I am anticipating that one day a life will grow.

This week Kodi was very sick.  He wasn't sleeping so well, eating, and he was shaking because of fever. But thank heavens for great vets and a couple of shots, he is running about again and doing whatever dogs do :) Also, since we have decided to stay in for the Songkran Holidays, we never get to do much but sleep, eat, nap, read, then repeat ;) Well, our weekend went as calmly and as quietly as we can manage. And looking forward to a great week. Have a wonderful week beautiful people! and remember

Hey guys! hope you are all having a fantastic weekend. I have been really busy the past few days hence the absence. So, today I thought I'd pop over and share with you one of my favorite "creations" my healthy go-to meal whenever I want something done in a hurry. So here is my simple Shitaki Mushroom Adobo.

Ingredients:

Fresh Shitaki Mushroom
Onions
Garlic
Sesame Seeds
Parsley (dried)
Spices (black pepper, Japanese all spice, Cayenne pepper, Coriander or any spices of your choice)
Olive Oil
Organic Soy sauce (organic being optional)

The Simple Way - Put the fire in medium heat. Saute the garlic and onions in olive oil. Wait till it smells wonderful and a little roasted. Then add the Shitaki Mushroom. Stir quickly. Add soy sauce and spices when the mushroom becomes a little soft and spongy. Then sprinkle with parsley and some sesame seeds. And there's your simple vegan meal. Good Day! beautiful people! Happy Easter for yesterday (or the day before yesterday). Life had been good to us these past few days. And although there was nothing so "big" about our days, we are very thankful and happy that our family of three... husband/ryan, kodi and me sustained yet another week of ordinary ;)

Well, I do and will honestly say, that once again, the past few days I toss and turn in my sleep some nights, anxious of the future. Yes, partly because I am worried, but most of it because the future suddenly becomes so interesting again. Feels like I am suddenly jolted from a long coma. And by coma I mean, the fear of being sick again, of my life staring at a glass hour. And although, in as much as I wanted to live in the now and live a day at a time... I am starting to make plans. To see a purpose and I feel like after a long while of just waiting for another sunrise, I am starting to dream again. To live again. 

Our week was actually quite eventful to say... I did a couple of task here and there and made a lot of plans too. And yes, I am starting to feel like I am normal again. That a dreadful cloud had been lifted and I can see so much of me, my dreams and promises of a good life of days to come. But I always see to it that I cherish every moment I live a day being hopeful. Well, I can say that part of my healing comes from the lesson I learn from our little Kodi. You know what they say about dogs having no past and no future. They only live for the moment and it may be true that they don't have that much memory of sadness, hatred and regrets...  (I would really want to think it that way). Like Cesar Millan said, "Dogs live in the moment.They don't regret the past or worry about the future. If we can learn to appreciate in what's happening in the here and now, we will experience a richness or living that other members of the animal kingdom enjoy." 

Well, human lives are indeed more complicated than that. And that we may have to worry a little, dream a little, get anxious, get scared, and to try to live at the moment to be able to live. “Life will break you. P.S. On to my journey towards a healthy, frugal and clean lifestyle. For now, I have somehow found my balance. I can't really say I am a full on vegan since I do still have to include eggs and honey on my diet. But aside from that I haven't used or consume any other animal products for a while now and it feels so good. And although I admit that we are still hoarding some things contrary to being minimal (we still hang on to some things important to us. Like our precious books.) However, this month, I will be doing some "frugal experiments" and see if it will work of us. And of course I will be sharing it with you so please stay tune for more updates my beaugorgeous! Good morning Beaugorgeous! (Beautiful and gorgeous) people of course ;) ! Welcome to another day of food display. As you know, I have been quite busy in the kitchen these past few months trying to navigate to a healthy and clean lifestyle. And after all some hit and misses, I would eventually come to a recipe worth sharing. So today, I bring you chili con vegan. This is by far the most complicated dish I did ever make but I am so proud of the result and here is how I did it.

Ingredients:

Soy Tofu
Garlic, onions, green pepper, read pepper, dried chili
black beans (I used the raw ones so I needed to pre-cooked it until it becomes soft)
diced tomatoes
tomato sauce
chili powder and seasoning
organic soy sauce (or the regular one)

Here's how I do it: Pre-cooked the black beans in a pressure cooker or in a regular pot. Just make sure the beans become soft and it's ready. Then into a separate pan, saute the tofu and add the spices and herbs. Add the tomatoes. When the tofu are a little brown already, add the black beans and the tomato sauce and the soy sauce. Let it boil then reduced to a simmer until it becomes pasty or the sauce becomes thick. Serve with rice or some toasted brown bread. 


And for today's special dessert, we got some fresh jackfruit. Do you know that jackfruit is rich in dietary fiber that is why it is a very good laxative. It contains vitamin C and a good amount of vitamin A and is an anti oxidant and helps maintain good vision. It is also rich in vitamin B 6 such as niacin, riboflavin and folic acid (the supplement I really need the most). 

So, there's my vegetarian recipe for today and hope you guys have a wonderful day! And oh, don't forget to grab a plate of jackfruit today or any of your favorite fruit.

Gooood Morning Wonderful people! Yep I am excited like that! who wouldn't be? weekend around the corner y'all and that only means, family time and finally, finally after eating mostly solo for a few days, Ryan will get to taste my home cook meals and he's got the whole seat for himself the whole weekend. So, I am very excited to try some new vegetarian/vegan recipes, and I can't wait to show off my new skills in the kitchen. Which by the way, only consist of having to saute, grill or roast some mushroom and veggies. But when you go vegetarian/vegan you have got to do a lot of convincing that it might look weird sometimes? but it sure is healthy and tasty. So, here are some recipes that I have tried, tasted, and proven to be good to the health and tasty as well.

My Very Own Garden Fresh Mushroom Salad. This is very easy to do. Into the pan, caramelize in olive oil a good portion of garlic. Then add the mushroom. Season with your favorite herbs and spices ( mine consist of dried coriander power, Japanese all spice, black pepper, and a little bit of cayenne pepper)

Then on a separate bowl. Mix a generous amount of green such as lettuce, spinach, bokchoy, etc. whatever you wish ;) then add the sauteed mushroom. Top with almond Parmesan to substitute the need for dairy cheese.


Then you can roast some potatoes. Simply slice some potatoes into squares. Drizzle it with olive oil, add some sea salt and some thyme. Put in a non stick pan on a low heat fire. Constantly turn your potatoes over to keep it from burning. And there you go. One healthy meal done. Have a wonderful weekend everyone and stay on the brighter side ;)
