Good morning Beaugorgeous! (Beautiful and gorgeous) people of course ;) ! Welcome to another day of food display. As you know, I have been quite busy in the kitchen these past few months trying to navigate to a healthy and clean lifestyle. And after all some hit and misses, I would eventually come to a recipe worth sharing. So today, I bring you chili con vegan. This is by far the most complicated dish I did ever make but I am so proud of the result and here is how I did it.

Ingredients:

Soy Tofu
Garlic, onions, green pepper, read pepper, dried chili
black beans (I used the raw ones so I needed to pre-cooked it until it becomes soft)
diced tomatoes
tomato sauce
chili powder and seasoning
organic soy sauce (or the regular one)

Here's how I do it: Pre-cooked the black beans in a pressure cooker or in a regular pot. Just make sure the beans become soft and it's ready. Then into a separate pan, saute the tofu and add the spices and herbs. Add the tomatoes. When the tofu are a little brown already, add the black beans and the tomato sauce and the soy sauce. Let it boil then reduced to a simmer until it becomes pasty or the sauce becomes thick. Serve with rice or some toasted brown bread. 


And for today's special dessert, we got some fresh jackfruit. Do you know that jackfruit is rich in dietary fiber that is why it is a very good laxative. It contains vitamin C and a good amount of vitamin A and is an anti oxidant and helps maintain good vision. It is also rich in vitamin B 6 such as niacin, riboflavin and folic acid (the supplement I really need the most). 

So, there's my vegetarian recipe for today and hope you guys have a wonderful day! And oh, don't forget to grab a plate of jackfruit today or any of your favorite fruit.

Gooood Morning Wonderful people! Yep I am excited like that! who wouldn't be? weekend around the corner y'all and that only means, family time and finally, finally after eating mostly solo for a few days, Ryan will get to taste my home cook meals and he's got the whole seat for himself the whole weekend. So, I am very excited to try some new vegetarian/vegan recipes, and I can't wait to show off my new skills in the kitchen. Which by the way, only consist of having to saute, grill or roast some mushroom and veggies. But when you go vegetarian/vegan you have got to do a lot of convincing that it might look weird sometimes? but it sure is healthy and tasty. So, here are some recipes that I have tried, tasted, and proven to be good to the health and tasty as well.

My Very Own Garden Fresh Mushroom Salad. This is very easy to do. Into the pan, caramelize in olive oil a good portion of garlic. Then add the mushroom. Season with your favorite herbs and spices ( mine consist of dried coriander power, Japanese all spice, black pepper, and a little bit of cayenne pepper)

Then on a separate bowl. Mix a generous amount of green such as lettuce, spinach, bokchoy, etc. whatever you wish ;) then add the sauteed mushroom. Top with almond Parmesan to substitute the need for dairy cheese.


Then you can roast some potatoes. Simply slice some potatoes into squares. Drizzle it with olive oil, add some sea salt and some thyme. Put in a non stick pan on a low heat fire. Constantly turn your potatoes over to keep it from burning. And there you go. One healthy meal done. Have a wonderful weekend everyone and stay on the brighter side ;)

I was letting go of a thing few days ago and realized... if that thing happened to be of such value, then it would be really difficult to trash it out eyh? But life is such. It is so much easier to let go of things we don't really value and hold on to something we cherish the most. Like those that we spent so much of our time, effort and money, and most of those that touch our hearts deeply. So how do we really value things? or is there really value on such things? I have often ask myself lately on what is important to me now. What is it that gives me joy and what is it that I would treasure the most. I am not talking about life here, for obviously, it ranks the most important to all of us. So what is it that defines me now. Is it a sense of purpose? to answer a calling to an ultimate need? to consume myself to human activism? to embrace an eminent responsibility? to console humanity? or to sit back watch the world go by, give a sigh of relief and let things be. How much do we give value to living? or are we too consume with all the "this is what its suppose to be" that we forget what is important. That with all the generalities in life we put everything in one tag and seek for more. How many more "valuable" things we need to have to be able to find our sense of self. 

Probably one of the greatest challenge for me and my journey to minimalism is how to really identify what I need, what is important and what should be cherished. I have heard and read so many claims about finding self worth through wanting less but is it really that easy? or is it just a trend? I have realized that this is more than just decluttering the trash you have been keeping your whole life. It is accepting what you are going to be with far far less than what the world owns. And then be happy of the choice you make without rationalizations and fancy/trendy definitions. Without being so self upholding and accepting that others have different choices than yours. So this is where I lay my thoughts to rest. To realized that what I value the most would certainly defines how I see myself regardless of not wanting more. So would I sit back and watch the world go by? definitely not perhaps... but I will find value in the most simple things I can do, the most simple things I can find and be happy on the thought that I can see in myself the change I wish to see even if it doesn't make any difference to the world.
