Good morning beautiful people! I am finally back from a "long holiday." Actually I just decided to stay under the radar for a couple of days to spend my time on some other things like being with family and of course a great deal of reading ( book review will be up soon) I hope ;) Anyways I wish all is well and having the greatest time! So this week I decided to share my healthy, easy and must try vegetarian recipes.

Vegetarian Fried Rice

What you need:
Carrots
Mushrooms
Eggs
Spices ( I use my homemade all spice)
Sesame Seeds
Cashew nuts
Boiled Rice (left over or whatever you prefer)

In the pan, pour in some olive oil. Saute the spices such as the garlic and onions. Add the nuts, diced carrots and mushrooms. Stir until the carrots and mushrooms are cooked. Then add a little bit of rice. Mix and stir. Then slightly make a gap in the middle of the pan and add the beaten eggs. Wait till eggs are cooked and stir altogether. When everything is well mixed, sprinkled with black sesame seeds and some spices then plate. 


Vegan Banana Jackfruit Pancake

And here's a sweet treat for your extra special breakfast :) just make some batter as you would do for your pancake. Just substitute your dairy mike with almond or cashew milk. Add 1/4 a kilo of jackfruit a banana or more. Enjoy!

Good morning! Its been 10 months already that I have completely stayed away from meat (yey) but I can't really say that it's an easy ride. Sometimes there are those days that you just want to grab a bucket of KFC and devour those chicken thighs like you are the last caveman. And yes, it takes a lot of determination and self talk to remind yourself that the feeling that comes after giving in is going to be ugly. So, I stick to my go-to craving fix that ditch the meat but still get the feel that it is the KFC that you eat ;)


Here's my favorite Battered Mushroom and Fried Tofu in Cashew and Almond Bits. The ingredients are exactly the same as you do for your battered chicken. However, I do added some nuts to add some crunch to it. 

What you need: 

Fresh Girolle Mushroom (sprinkled with a little bit of sea salt and spices) or
Soy Bean Tofu (marinated in vegan barbecue sauce)

For the batter (the same as what you would make for your battered chicken) just add
Spices (oregano, sesame, parsley, thyme, or anything you prefer)
Nuts (cashew nuts and almonds)

Dip the mushroom or the Soy bean Tofu into the batter and fry.

*for frying I use Canola Oil since it has high heat tolerance. Just make sure you read the label and pick one that contains omega 3 and healthy fats. And I prefer to use the oil only once. High heat often changes the oil chemical content thus increasing the concentration of trans-fat. Also, olive oil is not good for frying at high heat unless indicated.

So, there goes my go-to comfort food whenever I feel the "urge" to gobble some chicken thighs. And yes, it does taste like chicken...even better ;)

"Stay calm, you have a full life to live." Apparently I have to keep reminding myself so often that I never need to be afraid about anything anymore, never need to rush and never need to keep pursuing things that are never meant to be... and that I could never bungee jump even if I only live once and the "you got to live life to the fullest" requirement ;) It appears that here is that near death experience notion that we need take life at full swing, do something you haven't done before, go to places you never been before and sky dive from a speeding jet. However, my life is actually quite the contrary... I have never even done a marathon or stand up for any cause at all (not just yet). 


It seems like more and more I find myself taking life at a slow pace.  A slow walk instead of a marathon. It seems like waiting patiently for things to happen on its own time gives me that peace I never once have. And those little gaps between waiting comes like a perfect interlude.

So this week I did something that I always fail at doing. I started my own organic garden. Well, this is not a start to be honest. This is by far one start of my million tries to grow something. But I would patiently wait for the first sight of life forcing its way out of the seeds I have planted. And though I can't be too excited, I am anticipating that one day a life will grow.

This week Kodi was very sick.  He wasn't sleeping so well, eating, and he was shaking because of fever. But thank heavens for great vets and a couple of shots, he is running about again and doing whatever dogs do :) Also, since we have decided to stay in for the Songkran Holidays, we never get to do much but sleep, eat, nap, read, then repeat ;) Well, our weekend went as calmly and as quietly as we can manage. Hey guys! hope you are all having a fantastic weekend. I have been really busy the past few days hence the absence. So, today I thought I'd pop over and share with you one of my favorite "creations" my healthy go-to meal whenever I want something done in a hurry. So here is my simple Shitaki Mushroom Adobo.

Ingredients:

Fresh Shitaki Mushroom
Onions
Garlic
Sesame Seeds
Parsley (dried)
Spices (black pepper, Japanese all spice, Cayenne pepper, Coriander or any spices of your choice)
Olive Oil
Organic Soy sauce (organic being optional)

The Simple Way - Put the fire in medium heat. Saute the garlic and onions in olive oil. Wait till it smells wonderful and a little roasted. Then add the Shitaki Mushroom. Stir quickly. Add soy sauce and spices when the mushroom becomes a little soft and spongy. Then sprinkle with parsley and some sesame seeds. And there's your simple vegan meal. Good Day! beautiful people! Happy Easter for yesterday (or the day before yesterday). Life had been good to us these past few days. And although there was nothing so "big" about our days, we are very thankful and happy that our family of three... husband/ryan, kodi and me sustained yet another week of ordinary ;)

Well, I do and will honestly say, that once again, the past few days I toss and turn in my sleep some nights, anxious of the future. Yes, partly because I am worried, but most of it because the future suddenly becomes so interesting again. Feels like I am suddenly jolted from a long coma. And by coma I mean, the fear of being sick again, of my life staring at a glass hour. And although, in as much as I wanted to live in the now and live a day at a time... I am starting to make plans. To see a purpose and I feel like after a long while of just waiting for another sunrise, I am starting to dream again. To live again. 

Our week was actually quite eventful to say... I did a couple of task here and there and made a lot of plans too. And yes, I am starting to feel like I am normal again. That a dreadful cloud had been lifted and I can see so much of me, my dreams and promises of a good life of days to come. But I always see to it that I cherish every moment I live a day being hopeful. Well, I can say that part of my healing comes from the lesson I learn from our little Kodi. You know what they say about dogs having no past and no future. They only live for the moment and it may be true that they don't have that much memory of sadness, hatred and regrets...  (I would really want to think it that way). Like Cesar Millan said, "Dogs live in the moment.They don't regret the past or worry about the future. If we can learn to appreciate in what's happening in the here and now, we will experience a richness or living that other members of the animal kingdom enjoy." 

Well, human lives are indeed more complicated than that. And that we may have to worry a little, dream a little, get anxious, get scared, and to try to live at the moment to be able to live. “Life will break you. P.S. On to my journey towards a healthy, frugal and clean lifestyle. For now, I have somehow found my balance. I can't really say I am a full on vegan since I do still have to include eggs and honey on my diet. But aside from that I haven't used or consume any other animal products for a while now and it feels so good. And although I admit that we are still hoarding some things contrary to being minimal (we still hang on to some things important to us. Like our precious books.) However, this month, I will be doing some "frugal experiments" and see if it will work of us. And of course I will be sharing it with you so please stay tune for more updates my beaugorgeous! Good morning Beaugorgeous! (Beautiful and gorgeous) people of course ;) ! Welcome to another day of food display. As you know, I have been quite busy in the kitchen these past few months trying to navigate to a healthy and clean lifestyle. And after all some hit and misses, I would eventually come to a recipe worth sharing. So today, I bring you chili con vegan. This is by far the most complicated dish I did ever make but I am so proud of the result and here is how I did it.

Ingredients:

Soy Tofu
Garlic, onions, green pepper, read pepper, dried chili
black beans (I used the raw ones so I needed to pre-cooked it until it becomes soft)
diced tomatoes
tomato sauce
chili powder and seasoning
organic soy sauce (or the regular one)

Here's how I do it: Pre-cooked the black beans in a pressure cooker or in a regular pot. Just make sure the beans become soft and it's ready. Then into a separate pan, saute the tofu and add the spices and herbs. Add the tomatoes. When the tofu are a little brown already, add the black beans and the tomato sauce and the soy sauce. Let it boil then reduced to a simmer until it becomes pasty or the sauce becomes thick. Serve with rice or some toasted brown bread. 


And for today's special dessert, we got some fresh jackfruit. Do you know that jackfruit is rich in dietary fiber that is why it is a very good laxative. It contains vitamin C and a good amount of vitamin A and is an anti oxidant and helps maintain good vision. It is also rich in vitamin B 6 such as niacin, riboflavin and folic acid (the supplement I really need the most). 

So, there's my vegetarian recipe for today and hope you guys have a wonderful day! And oh, don't forget to grab a plate of jackfruit today or any of your favorite fruit.

Gooood Morning Wonderful people! Yep I am excited like that! who wouldn't be? weekend around the corner y'all and that only means, family time and finally, finally after eating mostly solo for a few days, Ryan will get to taste my home cook meals and he's got the whole seat for himself the whole weekend. So, I am very excited to try some new vegetarian/vegan recipes, and I can't wait to show off my new skills in the kitchen. Which by the way, only consist of having to saute, grill or roast some mushroom and veggies. But when you go vegetarian/vegan you have got to do a lot of convincing that it might look weird sometimes? but it sure is healthy and tasty. So, here are some recipes that I have tried, tasted, and proven to be good to the health and tasty as well.

My Very Own Garden Fresh Mushroom Salad. This is very easy to do. Into the pan, caramelize in olive oil a good portion of garlic. Then add the mushroom. Season with your favorite herbs and spices ( mine consist of dried coriander power, Japanese all spice, black pepper, and a little bit of cayenne pepper)

Then on a separate bowl. Mix a generous amount of green such as lettuce, spinach, bokchoy, etc. whatever you wish ;) then add the sauteed mushroom. Top with almond Parmesan to substitute the need for dairy cheese.


Then you can roast some potatoes. Simply slice some potatoes into squares. Drizzle it with olive oil, add some sea salt and some thyme. Put in a non stick pan on a low heat fire. Constantly turn your potatoes over to keep it from burning. And there you go. One healthy meal done. Have a wonderful weekend everyone and stay on the brighter side ;)

I was letting go of a thing few days ago and realized... if that thing happened to be of such value, then it would be really difficult to trash it out eyh? But life is such. It is so much easier to let go of things we don't really value and hold on to something we cherish the most. Like those that we spent so much of our time, effort and money, and most of those that touch our hearts deeply. So how do we really value things? or is there really value on such things? I have often ask myself lately on what is important to me now. What is it that gives me joy and what is it that I would treasure the most. I am not talking about life here, for obviously, it ranks the most important to all of us. So what is it that defines me now. Is it a sense of purpose? to answer a calling to an ultimate need? to consume myself to human activism? to embrace an eminent responsibility? to console humanity? or to sit back watch the world go by, give a sigh of relief and let things be. How much do we give value to living? or are we too consume with all the "this is what its suppose to be" that we forget what is important. That with all the generalities in life we put everything in one tag and seek for more. How many more "valuable" things we need to have to be able to find our sense of self. 

Probably one of the greatest challenge for me and my journey to minimalism is how to really identify what I need, what is important and what should be cherished. I have heard and read so many claims about finding self worth through wanting less but is it really that easy? or is it just a trend? I have realized that this is more than just decluttering the trash you have been keeping your whole life. It is accepting what you are going to be with far far less than what the world owns. And then be happy of the choice you make without rationalizations and fancy/trendy definitions. Without being so self upholding and accepting that others have different choices than yours. So this is where I lay my thoughts to rest. To realized that what I value the most would certainly defines how I see myself regardless of not wanting more. So would I sit back and watch the world go by? definitely not perhaps... but I will find value in the most simple things I can do, the most simple things I can find and be happy on the thought that I can see in myself the change I wish to see even if it doesn't make any difference to the world. Hey guys, I came up with my very own Hotte Garlic Tofu. It taste really good (according to husband) and I am so proud of it. It goes perfectly well with salad or some rice. 


What you need is some tofu. I got mine from Tesco. Some fresh and dried chile and a lot of garlic.


I also added some spices (not totally organic) but this is what I can have for now. So, I needed some black pepper, parsley, cayenne pepper and soysauce. 


Then of course I added some honey and apple cider vinegar.


Then sprinkled it with sesame love ;)

I have been randomly posting stuffs lately I know. But there seems to be so much going on...er not going on and right now I feel like I can just write whatever I find myself musing about. I have so far develop so many interest totally different from what I used to love. Not that I don't love the things I used to do before... I just find it so amusing to drift to a different area I never see myself doing. And yes, there's cooking. I know I am a bad cook but since I needed to make my food to stay focus on my vegan/vegetarian journey, I turned over some pots and started boiling ;) So here's one I made myself and of course specially proud of. My Tofu Spinach Pasta


And yup, I never thought any food as easy to make as this one can be so delicious and healthy and yes, no living creature was therefore harm in the process... I hope. So here's what you need....


Tofu that I got from Tesco. I never used to like Tofu and never ever did I even imagine myself to love Tofu the way I am now. But you can never tell... life is never an expectation anyway. Well anyway, research shows that consuming too much soy can also be very risky to the health since it can cause breast cancer among women. But well too much of anything can never be good anyway. So a moderate serving of soy in your diet can be okay. I guess....


Some Pasta of your choice. 
You may use some organic ones but for now I can do with whatever is in the grocery store. Just my way of not sweating the small stuff... at least for now.


Garlic and Spinach


And a can of spaghetti sauce I grabbed from the grocery shelf. I know I can puree some tomatoes instead to make it even a healthier choice but this one is more convenient. But promise... next time... I will chose a healthier option.

Then prepare and cooked as if you do some regular spaghetti. But this time there's no meat and sure taste the same even healthier. And easy to make.

We finally arrived to the Land of Smiles. And although it is such non-explainable mix of emotions, realizing that I will, after a long while, will be (somehow) on my own. I am on my way to a normal life or will it be normal again? Well, I may not often show it but I fear for the future sometimes. I fear that fear will consume me and will take most of my dreams. I haven't let myself become sad yet and my hope is that I will never be. 

So here I am very very anxious... and yes, being sick has changed me but I am still my own person I guess. The moment I step into my abyss, I was all of a sudden struck with too much adrenaline that I needed to contain myself. Not to mention that the house I left six months ago needed some serious cleaning... really, husband? oh well with all my love and understanding, it wasn't so easy being alone either while wife is away getting herself healthy again. No pressure then my love... a messy house is just a house, but I am home baby ;)



Well okay, how is it being back? well, aside from the fact that we are still looking for an oncologist who can replaced the wonderful doc I left in the Philippines, I still do have to battle the thought that I am not yet hundred percent well and it's still been six months and I need to slow down. What I had was not just any flu...so I needed to contain myself and stop rushing. And there's the fun of exploring through a good healthy lifestyle... yes, yes, I still do sneak out some polvoron (sweets we got from the philippines) but I am proud of myself for staying away from any meat for a while now so yey! for self control! But still mom needs to remind me to watch my diet and don't "eat too much"... I just got back from cancer, not fat camp so eating too much is a bonus. I love you mom. I know you wish the best of health for me. And again, I thanks you and dad for being there for me and my sweet parents in law. Your love and support come pouring like an April rain that never stops. I love you!


So, how did I survive it? well, I am aware that cancer can have different effect on different people. But this is how I become to managed it anyway. First, I never ever deprived myself of food. Never. You see when you have to go through chemo, the dr. will make sure that all the blood lab results to normal as much as possible like your hemoglobin, platelets, weight, etc. or else chemo will be cancel ed and postponed till lab test shows what is appropriate. So eating as much as I can and getting a lot of sleep really helps me maintain all the blood work and was never ever late for chemo. I have a very good relationship with food and I am thankful that it never changed after all. I still was able to eat "a little bit" what the dr. said, of ice cream, cheese, chocolates and of course I snack on lots and lots of fruits and veggies.  Second, I only listened to my Doctor. I know there's a lot of wonderful and kind intentions but after all it is the doctor that knows about your illness. So I make sure I listen and don't get mixed up with all the "anti cancer fad". But like I said, to each his own. Whatever works best is just as great. It's your body, listen to it.

Then I enjoyed my time doing things I find interesting. I learned some new hobbies and most of all I learned how to cook and I am very excited and challenged to finally embrace my way in the kitchen.




I know, I know it's not that fancy of putting together my food but at least there's some effort in it ;) Well, excuse my random thoughts for now but I sure needed to start writing somehow. Till next time my beauties!
